Adzuki Bean Salad with Peanut Dressing – Healthy, Gluten-Free, Oil-Free, Plant-Based Vegan Recipe

Asian Adzuki Beans and a simple peanut dressing come together in this 5-minute vegan recipe. This salad is full of plant-based protein and vegetarian fiber.

What are Adzuki Beans?

Red Adzuki beans are small, red beans, traditional to Asian cooking.  They are frequently used in Chinese and Korean recipes, in everything from soups and stews to desserts.  You can substitute with red kidney beans, mung beans, or black beans for this salad.

Peanut Butter Ingredient Tip: Double-check the Peanut Butter label. Look for a brand that has no extra oils, sugars, or syrups listed. These are often called peanut butter “spread”

Bottom-of-the Jar Trick:  Use an empty (or near-empty “bottom of the jar”) peanut butter jar to make a big batch of the Peanut Sauce.  You can whip up this bowl in minutes, or use it as a dressing for salad, a dip for veggies, or even poured over roasted sweet potatoes.

Tamari vs. Soy Sauce:  Tamari is the gluten-free version of soy sauce.  Use it in this recipe to ensure a gluten-free recipe.  If gluten isn’t a concern for you, you can use either tamari or soy sauce.

Ingredients

  • 1 tablespoon Peanut Butter
  • 1 teaspoon Tamari or Soy Sauce
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon lime juice
  • 1 15-ounce can Adzuki beans (or 1 1/2 cup cooked beans)
  • 1/2 bell pepper
  • 2 scallions
  • 2 tablespoons roasted peanut chopped

Instructions

  • To make the Oil-Free Asian Peanut Dressing: In a medium bowl, combine the peanut butter, tamari, rice vinegar, and lime juice. Give a quick stir to blend the peanut butter.
  • For the Salad: Drain and rinse the Adzuki beans. Add to the bowl with the dressing. Seed and dice the bell pepper. Add to the bowl. Slice the scallions. Add to the bowl. Chop the peanuts, if needed, and add to the bowl. Stir everything well to combine. Serve and Enjoy!
