5-Minute Adzuki Bean Salad with Oil-Free Asian Peanut Dressing
Asian Adzuki Beans and a simple peanut dressing come together in this 5-minute vegan recipe. This salad is full of plant-based protein and vegetarian fiber.
115-ounce can Adzuki beans (or 1 1/2 cup cooked beans)
1/2bell pepper
2scallions
2tablespoonsroasted peanutchopped
Instructions
To make the Oil-Free Asian Peanut Dressing: In a medium bowl, combine the peanut butter, tamari, rice vinegar, and lime juice. Give a quick stir to blend the peanut butter.
For the Salad: Drain and rinse the Adzuki beans. Add to the bowl with the dressing. Seed and dice the bell pepper. Add to the bowl. Slice the scallions. Add to the bowl. Chop the peanuts, if needed, and add to the bowl. Stir everything well to combine. Serve and Enjoy!
