Oil-Free Roasted Rosemary Garlic Potatoes

Garlic Rosemary Roasted New Potatoes – Healthy, Oil-Free, Gluten-Free, Plant-Based, Easy Vegan Recipe

This simple side dish combines the flavors of roasted garlic and rosemary with satisfying potatoes.  Use any colors of potatoes for a beautiful, healthy presentation.  This oil-free, fat-free recipe is great with Portabella Burgers or as a Brunch side dish.

Ingredients

  • 1.5 pound new potatoes (mix of red, gold, purple)
  • 1/2 tablespoon dried rosemary
  • 1 head garlic
  • Salt and Pepper

How it’s Done:

Preheat your oven to 450 F.  Line a baking sheet with parchment paper.

To Oil-Free Roast the Potatoes and Garlic: Wash the potatoes and cut in half.  Toss the potatoes with the rosemary.  Place the potatoes and the head of garlic on the parchment-lined baking sheet and roast in the 450 F oven.  Stir the potatoes after the first 10 minutes.
After 20 minutes, or when the garlic is well-browned, remove from the oven and let cool.
Continue roasting the potatoes, stirring every 10 minutes, until well-browned and a knife easily slides in and out.   It usually takes about 25 minutes total for the potatoes to be done.
While the potatoes finish roasting, peel the garlic cloves and transfer into a small bowl.  Mash the garlic with a spoon.  Add the dried rosemary.  Season with salt and pepper.  Stir to combine well.

When the potatoes pass the Knife-Glide check for doneness, remove them from the oven.  Immediately toss them with the mashed garlic rosemary paste.
Serve and enjoy!

Potato Variety:  Use any color potatoes you like for this dish. You can even roast the potatoes in a medium-hot spot on your grill, stirring every 10-15 minutes.

Other Dried Herbs:  Experiment with other dried herbs for this recipe.  Instead of rosemary, you can use dried thyme, sage, oregano, or even a blend like Herbs de Provence.
