Simple Fruit Mocktail Salad

Light, crisp, refreshing fruit “mocktail” is a healthy take on the classic canned version of pears, peaches, and cherries. Make this satisfying, easy recipe in the summer when sweet cherries are in season for a healthy, plant-based finish at an outdoor picnic. Enjoy with Smoky Sweet Potato Oil-Free Breakfast Hash, serve over Easy Tropical Purple Sticky Rice, or top with Coconut Chia Crème.

Ingredients

  • 2 Bosc pears, pitted and diced
  • 3 Peaches, white or yellow, diced
  • 2 cups green grapes, halved
  • 2 cups cherries, pitted
  • 1 tablespoon lemon juice

How It’s Done

To make Simple Fruit Mocktail Salad: Combine all of the fruit with the lemon juice in a large bowl. Stir well.

Serve slightly chilled.

Chef Katie’s Tips:

Bird’s Beak Knife: This knife has a short, curved blade shaped like a bird’s beak.  It is helpful for removing the core of the pear in this recipe.  It’s also helpful for trimming artichokes.

Other Fruits: Bosc pears are my favorite in this recipe because they have a firm texture that holds up well during the poaching. Let the seasons and the market guide you on the freshest fruit. You can use different varieties of pears, white peaches or nectarines, or golden cherries.

Other Acids: Besides the lemon juice, you can use other acids for a pop of flavor.  Champagne vinegar wine and lime juice would work.

No Refined Sugars or Syrups: I’m on a mission to avoid using sugar, maple syrup, and other refined sweeteners.  These ingredients leave you feeling hungry and can spike a sweet-tooth craving that pushes you to overeat.  For this recipe, whole foods, natural sweetness comes from the pears and vanilla bean.
