How to Make Oil-Free Roasted Rainbow Carrots

Rainbow carrots make a beautiful, simple plant-based side dish. It’s easy to roast them oil-free! You simply swap out the oil you would typically use for water. This gives the carrots enough moisture to soften in the middle. The roasting helps bring out the natural sweetness and a lovely golden brown edge. I call this technique Steam-Roasting.

What makes carrots “Rainbow”? 

Rainbow carrots refers to a bundle of carrots of different colors – yellow, orange, purple, red.  These colors come from the antioxidants in the carrots.  The same antioxidants that gives purple carrots their color is also in blueberries and eggplant.  For more nutrition, eat the rainbow!

What is Za’atar?

Za’atar spice gives these carrots a unique flavor. Green Za’atar is a Middle Eastern blend of spices including thyme, sumac, and sesame seeds.  You can make your own blend, find it in Middle Eastern markets, or order it online.  It adds great flavor to roasted vegetables, steamed rice, and cooked lentils.

Oil-Free Roasted Rainbow Carrots with Zatar

Gorgeous rainbow carrots are roasted oil-free and tossed with Middle Eastern Za’atar spices in this delicious, easy, and international recipe. This fat-free side dish pairs well with Baked Falafel Cakes and Roasted Red Pepper Hummus.

Ingredients

  • 1 pound rainbow carrots
  • 2 teaspoons Za’atar spices or Middle Eastern spice blend
  • 1 lemon
  • 2 tablespoons chopped fresh parsley

Instructions

  • Preheat your oven to 450 F.
  • To roast the Rainbow Carrots: Peel the carrots. Trim the tops and bottoms of the carrots. Halve lengthwise.
  • Place the carrots in a large baking dish or pan. Add enough water just to cover the bottom of the pan, about 1/4-1/2 cup.
  • Place in the pan 450F oven and roast for 20-25 minutes, tossing a couple of times during the cooking. When carrots are tender enough to cut, they are done.
  • Remove from the oven and toss with the Za’atar spices.
  • Garnish carrots with fresh parsley and lemon halves and serve.
