Miso Paste for Umami: Miso paste is made from fermented soybeans, chickpeas, and/or grains like barley. It has a salty “umami” flavor, which adds depth of flavor to sauces, dressings, and stews.
Oil-Free: I’m on a mission to get rid of empty calories, like those found in refined oils. This recipe skips oil and uses parchment paper to keep the bars from sticking to the pan. This makes a healthy, low-calorie recipe.

Ingredients
- 1 15-oz can white cannellini beans, drained and rinsed
- 2 tablespoon lemon juice
- 1 tablespoon white Miso paste
- 2 tablespoons Nutritional Yeast
- 1 clove garlic
- 1/2 tablespoon Dijon mustard
- 1/4 teaspoon sweet paprika
- 1/8 teaspoon cayenne
- 1/2 teaspoon Vegan Worcestershire
- 1/4 teaspoon black pepper
- 1/8 teaspoon salt
- 1/4 cup – 1/2 cup water as needed
Instructions
- To make the Oil-Free Vegan White Bean Caesar Dressing: Combine all ingredients in a blender. Puree until smooth. Add more water, if needed, to reach a pourable consistency. Taste and adjust seasoning.
- Yield: 1 1/2 cups

May I suggest adding some capers and a bit of torn nori : adds a briny ocean taste that mimics the anchovy note of a classic Caesar dressing .
I love this idea! I also sometimes add Kelp granules to recipes that would traditionally have sardines/sea creatures.
