Culinary School Lesson: Keep It Simple
One of the first lessons in culinary school: Keep it simple. In our first block of classes, Chef Clumsky would constantly encourage us to think about unnecessary ingredients. “What can you take out of that recipe?” He stressed that every ingredient should have a purpose.
“Can you taste every ingredient?“
This is a lesson I encourage for improving your cooking. As you gain more experience in the kitchen, remember to taste your food often. When you taste, though, you aren’t just asking “Is it delicious?” Rather, ask yourself “Can I taste every ingredient in here?”
If you added 2 cloves of garlic, can you taste them? If a recipe called for a tablespoon of tomato paste, can you taste it? Then, if you can’t taste it, ask yourself if that ingredient was necessary. If so, add more. If not, let it go.
Sometimes the best cooks are the ones with the most restraint.
Chef Katie’s Healthy Cooking Tips for Simple, 5-Ingredient Butternut Squash Apple Bisque Soup:
Spice Tip: If you have poultry seasoning on hand you can use this instead of the sage, and rosemary. Simply use 2 tablespoons of dried Poultry Seasoning instead of the fresh herbs.
Freezer-Friendly: This soup is incredibly freezer-friendly. Make a big batch and freeze extras for future meals.
Fall Squash Varieties: Use any varieties of fall squash for this recipe. Red Kuri squash, pumpkin, and Sweet Dumpling are some of my favorite. You need about a 2 to 2 ½ pound squash for this recipe.
Fancy Microgreens: Microgreens are harvested from the tiny buds produced as plants just start to sprout. They are packed with nutrients and add a pop of flavor. Chefs like to use these as a simple way to add beautiful elegance and bright color to creamy soups like this Butternut Bisque
