Oil-Free Roasted Purple Power Cauliflower Potato Hash
Eat your Purple Power! This easy, oil-free hash uses beautiful purple cauliflower, potato, and onion for healthy breakfast. Roast off these veggies during weekend meal-prep and enjoy throughout the week. Works great as a filling for vegan breakfast burritos or serve as vegetarian side at Sunday brunch.
4medium purple potatoesscrubbed and cut into bite-sized
1head purple cauliflowertrimmed and cut into large chunks
1red onioncut into large cubes
2sweet bell pepper
4garlic
2tablespoonsGreek Spice Mix
Salt and Pepperto taste
Instructions
Preheat your oven to 375F. Line two baking sheet with parchment paper or a non-stick baking mat
To make the Oil-Free Roasted Purple Power Cauliflower Potato Hash: Spread the potatoes, cauliflower, red onion, and bell pepper onto the pre-lined baking sheets. Add the garlic, Greek Spice Mix, and salt and pepper (to taste). Use your hands to roughly toss, coating the veggies with the spice mix.
Bake for 15 minutes.
Stir around the hash to ensure even roasting. Increase the oven temperature to 425. Place the hash back in the oven and roast 10-15 more minutes, until the potatoes and cauliflower are tender and brown at the edges.
Serve immediately.
