Making a Plant-Based Vegan Version of Classic Pumpkin Spice Coffee Frappuccino

Pumpkin Spice Coffee seems to be all the rage. The creamy concoction of coffee, milk, and seasonal fall spices is synonymous with the leaves changes colors and sweater weather. Yet most pumpkin spice latte recipes use tons of sugar. Even with vegan soy or almond milk, it can still be a calorie bomb. Plus, sometimes you crave something cold. This plant-based version hits the spot. It’s creamy, refreshing, and sweet enough to satisfy. Plus, it has all of those class pumpkin spice flavors.

What’s the secret to a frothy drink? Without adding a ton of calories with heavy cream? Coffee ice cubes!

By using cold coffee ice cubes, you infuse your Frappuccino with extra coffee flavor. Get in the habit of making an extra cup of coffee. Then, start freezing a tray of cubes at night, before you go to bed. While you’re at it, put a glass or mason jar in the freezer.

The next day, you have Frappuccino delicious waiting for you. Simply throw everything in a blender. Pour into your chilled glass. Then sprinkle on some cinnamon, grated nutmeg, or a few cocoa nibs. Faster than you can call your barista, you have a Pumpkin Spice goodness in your hand.

Chef Katie’s Healthy Cooking Tips for Creamy Vegan Pumpkin Spice Frappuccino Coffee Drink:

No Coffee Ice Cubes? Use regular ice cubes. Add 1 teaspoon instant coffee spresso to the blender.

Avoiding Caffeine? For a caffeine-free version of this recipe, use coffee ice cubes made from decaf coffee. You can also make ice cubes from a spiced tea. Masala chia, apple spice, and country peach are my favorites for making seasonal Frappuccino.

What is Pumpkin Pie Spice made of? Pumpkin Pie Spice is a mix of cinnamon, nutmeg, and ground clove. You can make your own mix. Or, invest in a good-quality organic blend.

Chilled Glass: When you make your coffee ice cubes, put a glass or mason jar in the freezer. Use this chilled glass to serve your Frappuccino. This will keep your coffee colder for a long time
