Oil-Free Vegan Baked Potato Latkes

 

Baked Potato Latkes with Easy Applesauce – Healthy, No Sugar Added, Plant-Based, Vegan Sauce Recipe

This oil-free vegan latkes recipe is a healthy take on a classic Jewish tradition.  Shredded potatoes come together with a bit of gluten-free flour for a dish everyone can enjoy  Serve these with Easy Applesauce for Hanukkah or enjoy as a tasty appetizer at any party.

Ingredients

How it’s Done:

Preheat oven to 425 F.  Line a baking sheet with a non-stick Silpat mat or a piece of parchment paper.

To make the latkes: Peel and quarter the potatoes and onion. Set up the large hole opening on a food processor slicing blade. You can also use a box grater.
Feed the onions and potatoes through the food processor.
Transfer the shredded onion and potato to a clean kitchen towel, set up over a colander. Squeeze the onion potato mixture to get out as much of the moisture as you can. Discard these juices.

Transfer the squeezed onion potato mixture to a mixing bowl. Add the chickpea flour, garlic powder, baking powder, and salt. Use your hands to mix well. Line a large sheet pan with a non-stick baking mat or spray lightly with oil.

Portion about 1/4 cup of the potato onion mixture for each latke. Flatten with your hands. This should make about 15-16 latkes.
To bake the latkes: Bake at 425 for 30 minutes. Flip after the first 20 minutes.
Serve immediately with applesauce.

Yield: 16 latkes

Chef Katie’s Tips:  

Wanting Oil?  If you’re craving a more traditional version, using oil, don’t use the parchment paper or Silpat.  Rather, spray the baking sheet with oil (canola is best).  Reduce the baking time by 5 minutes.

Chickpea Flour, Basan, Garbanzo Bean Flour:  Chickpea flour is sometimes also called Garbanzo bean flour.  In Indian markets, it’s called Besan.  For a gluten-free, Celiac-safe frittata, double-check to make sure your flour is certified gluten-free.
